The Meating of Life

The quest for the meaning of life starts and ends here. Those countless spent philosophizing of that one pesky question is laughable to us Meatwavers, because we know and have always known the only true answer—Meat! That's right, life is and will always be all about the meat, and that's exactly what we rejoiced in this past weekend as we devoured 3 racks of ribs, 2 beer-can chickens, and a mess of beans cooked with a pound of bacon.

Rib day is always a good day at the Meatwave. Although I love sharing the meat, I was sneaky with the first rib day this year, choosing a date where I'd be sure to get more than my fair share. Ribs are one of those things that go so fast that by the time I'm done serving, I've usually missed out on most of it. To alleviate that horrible injustice, I chose Memorial Day weekend to smoke a few racks of my standard recipe—a time that represents a mass exodus from the city, leaving the Meatwave a smaller and more intimate affair. The strategy worked to such and extent that I even had enough to send others home with rib leftovers, a first around these parts.

Being a Meatmaster, I can never just settle on one type of meat on any given day, and on this day, I choose to bust out another classic—beer-can chicken. An unexpected benefit of my new rotisserie attachment for the Weber kettle is the extra height the ring adds makes it possible to cook a lot of beer-can chickens more easily on the grill at once. I only made two because of the smaller crowd, but I have a feeling that I could push that to three or four chickens at one time, and I'm sure that day is nigh.

Rib day wasn't made this past weekend solely out of my gluttony and selfishness, but also because of a special request from soon-to-be-mom Daphne. Her little one needed ribs, and needed them now! I couldn't be more proud that my ribs were feeding the future Mia Rose. That baby is going to be born with a taste for barbecue, I just know it.

Mr. Daphne, aka Blair, brought along a whole mess of stuff he concocted from the pages of the most excellent Momofuku cookbook. Pickles, noodles, and tomatoes added fresh sides that balanced the heavy barbecue. Each one of these were spot on, reminding me so much of all the great tastes from meals I've enjoyed at the army of Momofuku restaurants.

It wasn't only unborn children getting their first 'que last weekend, but also little Maximo, progeny of JP and Tamara. The entire clan were enjoying their first Meatwave, and I don't think it disappointed. Little Max loved the spicy pork ribs and JP said I could end wars with the beans. Hopefully I've made true converts out of them and they will be gracing the meaty plains of Astoria sometime again this summer.

Last, but not least, Lani put in a good day of eating with us all. Ditching her visiting parents for maters of meat that were much more important, she also came delivering fresh peas and green beans. So much vegetables have been popping up at the Meatwave, I'm getting worried it's balancing out my meat consumption too much...better go grab one the last remaining ribs before I head to bed.

Goodnight world...until we meat again.
