Pimento Cheese Twice-baked Potatoes

It was a gradual, creeping change. Year by year, one by one, I took over every dish of the Thanksgiving dinner, save the out of season asparagus my Mother insists on. At this point, I've settled into a menu that adorns the holiday table each year, a series of dishes I think of as family tradition. So it came as some surprise when there was a request to alter this comforting and familiar spread into something new last year.

Being a man of tradition, it came with a little trepidation that sweet glazed ham replaced the roast turkey, macaroni and cheese took the place of the cornbread and sausage stuffing, and Brussels sprouts with bacon stood in for my green bean casserole. When I asked what we should do instead of mashed potatoes, my sister made it explicitly clear that those were to go nowhere. Still, I couldn't help but wonder what would be an appropriate starchy side that would go with the new meal that was taking shape, and thought these pimento cheese twice-baked potatoes would fit in seemlessly.

It's been a goal of mine for quite some time to get the family to switch from turkey to ham for Thanksgiving—why settle for an inferior meat? For a holiday whose centerpiece is that iconic piece of poultry, this is a hard pill to swallow. Add to that the fact that the people I'm attempting to convince this is a good idea are Jewish (albeit Jews who no longer keep kosher), the prospect gets even harder. So it's with great pride that I announce that 2013, only 34 years after my birth, that the Bousel family will have a sweet city ham adorning the festive table for the first time ever. It was a full on sale to my mom and sister, but wasn't as enthusiastically received by my dad and stepmother. So I relented, that ham will get some company in the way of turkey, but with no need to cook an entire bird, I'm looking at the best ways to scale this down, and these herb-rubbed turkey breasts would do quite well.

Sweet Potato and Corn Salad

One Thanksgiving staple I've never really been able to get behind are candied sweet potatoes. The natural sweetness of these tubers are one of my fall and winter pleasures, so why would you go and mask that with more sugar and marshmallows? Makes no sense to me and the dish feels as if I'm eating my dessert next to my main course. If I were to do a sweet potato side for the big holiday meal, it would be more in line with this sweet potato and corn salad, which I first came across when I was hosted at a tasting of recipes from the Brother Jimmy's BBQ Book.

In barbecue, bigger may not always mean better, but it certainly helps with those all important bragging rights. So why stop at beer can chicken? Why not bring out the big guns and do an entire turkey beer can style! I say if you're a pitmaster, it'll certainly score you big points on impression, and luckily, it's also pretty damn delicious.

I have a fair amount of friends who stay put for Thanksgiving, making holiday meals for just two or three people. I'm so accustomed to cooking for a crowd, I wondered what it would be like to make a Thanksgiving dinner that was a reasonable size for a couple. A whole turkey would probably be overkill, and ensure you'd be eating nothing but bird for at least a week straight. Thinking smaller, but not venturing into "Thanksgiving chicken" territory, I thought why not just cook the turkey breasts, but that seemed a little lackluster with no allure of holiday flare. So then I went a step further and created this turkey breasts with cranberry stuffing.
